Like #Teamaparto are you always searching for new and exciting recipes to use up those Christmas leftovers. One of our residents Fer has kindly created a mini festive food blog, sharing her top tips for you to enjoy. The recipes are nice and simple and extremely tasty. So lets get cooking together! These 6 recipes feature: 2 turkey leftover options, 2 vegetarian options and 2 delicious desserts!

Turkey pasta

If you want something simple but fancy, pasta is always the way to go 

Leftover ingredients:

  • Turkey pieces 
  • Turkey gravy/ drippings 
  • Cream
  • Cheese 
  • Salt and pepper 
  • Pasta 

Steps 

  1. Pull apart the turkey pieces and set aside 
  2. Boil water and cook pasta 
  3. While the pasta is getting done, whisk the sauce in a pot. Put inside the turkey gravy, salt and pepper and cream
  4. Once pasta is done, put one cup of pasta water into the sauce to make it smoother 
  5. Strain the pasta and put back in the saucepan 
  6. Add the pulled turkey and sauce and mix all together
  7. Sprinkle cheese on top 
  8. Enjoy your pasta 

 

Turkey soup

If the day is too cold, why not do q soup to warm your heart 

Leftover ingredients:

  • Turkey 
  • Turkey gravy 
  • Vegetables 
  • Chicken stock 

Steps

  1. Pull the turkey apart 
  2. Boil water and dilute you stock
  3. Cut vegetables into pieces while the water boils 
  4. Add everything to a pot 
  5. Stir until it simmers
  6. Enjoy

 

 

Vegetables frittata

Feel stuffed? This recipe is so light and delicious you will crave more 

Leftover ingredients:

  • Vegetables (Ex. potatoes, green beans, carrots or sprouts) 
  • 6 Eggs 
  • Goat’s cheese (if you like tangy foods)
  • Gruyere (if you like strong flavors) 
  • 3 tablespoons of Olive oil 

Steps

  1. Preheat oven at 200
  2. Cut all the extra vegetables from last night 
  3. Whisk 6 eggs in the side 
  4. Heat a sauce pan with the olive oil on high heat 
  5. Put in the vegetables 
  6. Pour eggs on top 
  7. Sprinkle cheese 
  8. Immediately put in the oven 
  9. Leave it inside for 8 mins 
  10. Enjoy

 

Vegetable patties

If you are vegetarian, we have the perfect recipe for you

Leftover ingredients:

  • Vegetables
  • 1 egg
  • Breadcrumbs
  • Oil
  • Mayo
  • Spicy sauce

Steps

  1. Chop the vegetables as fine as you can
  2. Mix in a bowl with the eggs and breadcrumbs until the batter is able to stick together
  3. Form patties with you hands
  4. Heat up olive oil and fry the patties 2 mins in each side at medium heat
  5. On the side, mix the Mayo and spicy sauce to make your dip
  6. Wait a few minutes for the patties to cool and spread dip in top
  7. Enjoy

 

 

Dessert Cake pops

If your friends and family did a cake that has gone stale, you can do this fun recipe 

Leftover ingredients:

  • Cake 
  • Can Frosting (vanilla or chocolate)
  • White chocolate 

Steps 

  1. Crumble the cake into a bowl 
  2. Add frosting but by bit until mixture is firm to the touch 
  3. Form tiny balls 
  4. Put inside fridge until they set 
  5. Boil water and put in saucepan 
  6. Cut chocolate into pieces and put inside a bowl 
  7. Melt the bowl of chocolate over boiling water and melt by mixing with a spatula 
  8. Dip the top of the cake pops in chocolate mixture 
  9. Set aside until chocolate firms 
  10. Enjoy with a bunch of friends

 

Bread Pudding 

It always happens that everyone is so full that the bread gets untouched… not this time!

Leftover ingredients:

  • 3 cups of bread bread
  • 2 tablespoons butter 
  • 1 egg 
  • 1/4 cup of sugar 
  • Milk
  • Cinnamon to taste
  • Salt 
  • Raisins (optional) 

Steps

  1. Preheat over to 185 C
  2. Put in a saucepan the mil and butter over medium heat until milk is warm 
  3. Another bowl mix the salt, sugar, cinnamon and egg 
  4. Add the bread into the bowl and stir
  5. Put the inside of the bowl in an oven dish 
  6. Pour over two cups of milk and the butter 
  7. Sprinkle raisins 
  8. Cover with foil 
  9. Bake for 35-45 mins 
  10. Enjoy with a nice cup of tea
